Roman Osteria

Over 30 years of tradition

We are a restaurant that was born in the distant year of 1992 from an idea of our ancestor Remo Spoletini, a long-time chef, and his son Sandro Spoletini. Our idea from the beginning was to create a Roman osteria that respected the seasonality of ingredients, using only fresh, flavorful, and high-quality ingredients as the foundation of any respectable cuisine.

To create our traditional dishes and more, we always select excellent ingredients and suppliers that align with our philosophy. For example, we use pasta from Pastificio Lagano, one of the best pasta factories in Lazio located in Pomezia, which strictly extrudes their pasta through bronze dies. This results in high-quality pasta that we pair with low-salinity products from Cibaria SRL, a distributor of excellent products based in the Castelli Romani area. The result is a masterpiece of our local gastronomy, such as the Amatriciana or Carbonara sauce, which preserves the balance of flavors in the preparations.

Another example is our Pecorino Romano DOP, with low salinity and so much, so much flavor! We also use high-quality peeled tomatoes without compromise from the flavors of Corbara, an organic company located in the Monti Lattari in the province of Salerno, cultivating their products using traditional methods in the homeland of Italian tomatoes.
